I have a really busy week coming up which means I won’t be around for dinnertime a few of the days. Part of my day Monday was spent prepping some dinners that either the babysitter, dad or grandpa can pop in the oven. Things that can be made ahead and reheat well are my wheelhouse. Tuesday night everyone is having this ultra creamy mac with the veggies already in it. Wednesday night it’s my Weeknight Meatballs with pasta and salad. Lasagna
I’d like to get better at making lasagna. Honestly, it’s not really my ideal pasta dish, but many other people LOVEn it. I’ve had maybe 2-3 lasagnas that really blew me away. One of them was one I made, it was the Lasagna Bolognese from Bon Appetit. There’s a lot of variables! Like what type of noodle to choose. To boil, soak or nothing at all. What kind of cheese, what kind of filling.. I’d love to hear from readers about lasagnas you love. Maybe you have a favorite recipe? A tip or trick?

Cheese: There are many options here. First off don’t use pre-shredded cheese, there are anti-caking agents on it that prevent it from melting well. I used half sharp cheddar and half white American cheese. Recently I used an aged fontina and that was delicious. Gruyère, gouda and Monterey Jack all are good options.
