An Easy, One-Pot Way To Cook Calamari
Are you intimidated to cook squid? Maybe you’ve had it fried and love it, and would like to cook it at home. This is a very easy, one pot way to make delicious and healthy calamari. It’s one pot and around 25 minutes.
Never bought calamari at the supermarket? Thats okay, a lot of people haven’t. Ask the person behind the fish counter where is it in case you don’t see it, it might be in the freezer (frozen is fine!). You’ll want to ask for a mix of tubes (white part) and tentacles (purple part).
Already have regular tomatoes at home? No problem, ditch the cherries and dice up your whole tomatoes. Don’t like olives? Also, fine! Maybe try capers or a squeeze of lemon juice at the end. A little salty, briny bite does go really well here.
Ingredients:
1/4 cup extra virgin olive oil
2 garlic cloves, finely chopped
1 shallot or small onion, finely chopped
1 pound calamari, a mix of tubes and tentacles, tubes sliced into 1/4” slices
1 pint of cherry tomatoes, halved
1/2 teaspoon salt
1/2 cup dry white wine
1/4 pitted kalamata olives, halved
1 (14 ounce) can cannellini beans, drained and rinsed
small handful of parsley, chopped
Here’s How:
Heat the oil in a large skillet or low pan over medium heat. Add in the garlic and shallot and cook for 2 minutes, until everything is translucent.
Add in the calamari, tomatoes and salt and cook for 1 minute, stirring often.
Pour in the white wine, reduce to heat, cover and simmer for 15 minutes.
Remove the lid, add in the olives and drained beans and simmer, uncovered, for another 8-10 minutes, just until some of the liquid has evaporated.
Top with the chopped parsley before serving.
