I haven't written a lot (if at all) about it here, but I wrote a cookbook 3 years ago called Lunch! And yes, you guessed correctly, it’s a whole book about the mid-day meal. It’s a good thing that it wasn't released in 2020 because it’s geared around packing lunches to bring to work. To my surprise though, I got tons of DMs and emails from readers during the pandemic saying something along the lines of “Hi! I’m a big fan of your book - especially the recipe on page XXX but I’m living somewhere else during lockdown and I don’t have my copy, but I NEED that pasta. Can you send me the recipe or take a photo of the book page?” It was really fun to hear what recipes people were loving and connect with readers personally. My favorite feature of the book, is at the beginning of every chapter or “week” I give you a grocery list of everything you’ll need to make the lunches for the week. You can snap a photo on your phone before you head to the store.
Crispy Fish Tacos sans the frying part
Later today, subscribers will receive a similar plan. A grocery list that will lead you to a few different dishes. I made a big pot of smoky pinto beans, a big bowl of lime & cilantro slaw and discovered a really good hack for crispy fish tacos without the deep frying at home. That’s something I don’t care to do at home - I’ll leave that to the restaurants.

Dean ate plenty of the pinto beans from this week’s plan. He unfortunately missed out on the crispy fish, because we ate that for lunch while he was at school (mean parents). But he also loved having scrambled eggs over leftover takeout sushi rice - I mentioned last week how much I love ordering an extra side of rice with our takeout. Both baby & mama are a huge fan of scrambled eggs over sushi rice - chili crisp on moms.
What I’m Loving This Week:
Signs by Laura Lynne Jackson: Laura is a psychic medium and author that I’ve loved listening to on the Goop Podcast and Super Soul. I’ve had many experiences that have solidified for me the existence of the afterlife or at least the notion that our loved ones aren't completely gone after they pass. It’s one of my favorite topics to connect with people on. To swap stories. There’s something about that feeling you get when you hear these stories. Part heart-wearing, part chills, part excitement. This book is all about that. It’s filled with stories from people who she’s given readings to but also practical tips on how to identify these signs from passed loved ones and even how to ask for them. Highly recommend it.
Smoked Salmon: We go through phases in our house with it. Dean really loves it, so we’re on a kick at the moment. For him, I either just give him little pieces straight or a piece of toast with cream cheese and the salmon cut into little squares. For us, one of my favorite dinners is Trader Joe’s frozen latkes, sour cream or cream cheese, smoked salmon, lemon, chives or scallions and a simple salad.
My Air Fryer: I’m still loving my air fryer, even I can’t believe it! Chicken cutlets, frozen dumplings, frozen spring rolls, broccoli, cauliflower… the list goes on. Who here has an air fryer? And do you want more air fryer recipes? I’m very curious to hear. Drop my a line in the comments.
