The birthday party turned out SO WELL! It was a major success. So much so that Dean blew out his diaper to the point that I had to throw away his brand new pants. That’s how you know a toddler partied too hard. I thought someone had spilled iced coffee down the front of his pants… nope! But the real celebration came later in the week when Luca (3 months old this week) SLEPT through the night for the first time! Fellow parents out there can relate to the very confusing feeling of when you wake up at 6am and realize you haven't been up with a baby all night. First there is confusion, then comes bewilderment, then comes the cheering. It’s the ultimate sensation of HOPE.
Fish Tacos
Another hit in our house this week was these fish tacos. I had heard rumblings on the local Mom Facebook group about people’s love for the Costco Fish Sticks. So when I was shopping for the party I picked up a bag. I was very pleased to see that they were wild caught Pollock. Well, there are DELICIOUS. I made us fish tacos and my son ate them straight up with a little bowl of the coleslaw dressing to dip into. I made a very flavorful but easy coleslaw, a batch of pickled red onions and a spicy mayo/sour cream drizzle. All housed on a Vista Hermosa flour tortillas. They were so outstanding that I made them twice in one week and we have plans for them this week. The coleslaw is great because you can make a container of the dressing, shred up a bunch of cabbage and mix the two as you need it all week. It’s great next to all sorts of mains. What I’m Loving This Week:
Weleda Diaper Cream: This has been my go-to diaper cream for both babies. It’s got “clean-er” ingredients and the smell is wonderful. It’s for everyday maintenance and light rashes. But recently, I’ve been putting it on my face before bed. May not be for everyone but hear me out. There’s a lot of zinc in diaper cream to soothe redness and inflammation. I personally have very dry skin that has redness in the cheek and mouth area. Can’t deny, that redness has a lot to do with my sugar intake and I’m working on that. But in the meantime, a little of this cream on those areas has really reduced the redness by morning. I mean it make sense right?
Bachan’s Japanese BBQ Sauce: Woweee this sauce is delicious. We bought this at a shop in our town on a whim and I'm glad we did. It’s a thin, deeply savory and sweet sauce that you can use for dipping, drizzling or marinating. There’s no way around it, it has a lot of sugar in it, which I did say I was working on. But a little goes a long way. This week I’m going to brush it on chicken thighs that are headed to the grill. Last night we drizzled it on air fried broccoli.
