Greek-ish Chicken Meatballs
my kids loved these, all the ingredients came from TJ's & there's no chopping.
Greek-ish Chicken Meatballs
makes about 16 meatballs & serves 2-4
2 eggs
2 garlic cloves
1/4 cup Greek yogurt (sour cream or milk are fine too)
1 teaspoon kosher salt
small handful of parsley
small handful of dill
1/4 cup pitted kalamata olives
1 pound ground chicken, turkey, pork or beef (even lamb!)
3/4 cup plain breadcrumbs (panko is fine too)
extra virgin olive oil
Heat the oven to 450° (use convection if you have it). Line a large sheet pan with parchment and drizzle it with olive oil.
In a blender, combine the eggs, garlic, Greek yogurt, salt & herbs. Blend until smooth. Add the olives and pulse until the olives are roughly chopped.
Pour this into a large bowl and add the ground chicken, breadcrumbs and a drizzle of olive oil. Mix well with your hands. Use a cookie scoop or your hands to make even sized meatballs. Place the meatballs on the prepared baking sheet.
Drizzle the top of the meatballs with a little more olive oil and bake for 16-18 minutes, until they are slightly golden on the outside and firm to the touch.
We love this served with tzatziki sauce!
