On our Caribbean vacation I had key lime pie on the brain. Having a super tart and sweet slice of it while sitting beachside was the goal. I had a piece and it didn’t really live up to the fantasy. I’ve had a lot of mediocre key lime pie and a lot of mediocre cheesecake in my life. Good cheesecake is more easily found in life but a really stellar version of key lime pie is more elusive. Then a mom in my group mentioned that she loved key lime anything and the ambition was planted. I already make a BOMB cheesecake and I’ve made really good key lime pie in the past, so I put them together. The result is greater than the sum of it’s parts.
It’s not hard. It’s multi-stepped and takes some planning ahead because it needs time to cool. But other than that it’s pretty straightforward. I used a piping bag and tip to decorate the top with whipped cream. YOU don’t need to do that. You could spoon the whipped cream over, make swirls with a spoon and everyone would still be blown away. I decorated mine with lime slices, mint and edible pansies from my garden- these are completely ornamental and optional. a “fake” dessert:
My older son really loves to have a sweet after dinner and typically i give him a few Annie’s graham cracker bunnies. But recently, I got the smart idea to make him banana slices with “frosting” and sprinkles. You slice a banana into coins, put a tiny dollop of RX brand Vanilla almond butter on each and then dust the whole thing with sprinkles. This specific almond butter literally tastes like frosting, it’s INCREDIBLE. And the sprinkles makes him think it’s some big treat. I don’t know how long the ruse will last, but for now it’s hilarious to hear him ask for the “banana frosting dessert” and get so hyped when I bring it out to him.
