Pasta with chickpeas (Pasta con ceci) is a very simple and traditional pasta. I’m a mom, so I’ve taken the liberty of hiding vegetables in it. Specifically onion, garlic, carrot and celery that are blitz in a food processor, the same way I make my pasta bolognese. With the addition of tomato paste, rosemary and chicken stock it really resembles bolognese in texture and taste. Hence why I’ve entitled this “Pasta with Chickpeas a la Bolegnese”. Note: I haven’t included a splash of white wine or a pinch of nutmeg in the recipe BUT if you have it and want to use it, it would drive home the concept even farther.
This pasta is quick to make, can be vegetarian (if you use vegetable stock), filling and is made in one pot. My kids (3 and 1) are both VERY into it. The vegetables are chopped finely in a food processor which is great for you because it’s less chopping but also your kids can’t see them. And best part, it FREEZES BEAUTIFULLY. Imagine having individual servings of this in your freezer and when you need to feed a hungry mouth, you just pop one in the microwave or on the stovetop. What I’m Loving This Week:
W&P Cup Cubes Freezer Tray: This brand makes the best ice cube tray EVER. and now they make the same concept but larger. They are 1 cup sized and meant for freezing individual portions. That is what I froze the pasta in! It’s cool because the cube of food pops right out. So, you can pop it out into a bowl and warm it up. I’m thinking I’m going to make a big batch of steel cut oats next and freeze portions of that.
Mini Spice Mill: I use ground fennel seed ALOT in my cooking. I’m crazy about the flavor. And normally I grind them in this little marble mortar and pestle I have, which is fine but it definitely takes some elbow grease. A brand named Cole & Porter recently gifted me one of their spice mills. It’s like a pepper grinder but apparently made for spices. And it works great. It’s not the most attractive thing - IMO! They were hoping to get a glowing review out of me. And I will say, the thing is super functional and I’m psyched to be using it for my fennel seeds, it’s just not that cute. But if that doesn’t matter to you and you’re over there hand crushing lots of fennel or cumin seeds, check this thing out!
