Lobster Pasta with Corn & Basil
Wow! Did this pasta get people excited on Instagram, or what?! There’s nothing like some lobster to get everyone talking. My dad gifted me 3 lobsters last Sunday night and I came up with this pasta on Monday on the fly. It’s got all the flavors of summer. It’s by no meals a budget friendly weeknight dinner, but everyone wanted to know. So here’s what I did in broad terms…
Steamed the lobsters.
Shelled the lobsters. Separated the shells and the meat.
Put some of the shells and legs in a high sided pan with a stick of butter and simmered it for 45 minutes. Removed the shells and strained the butter.
Cooked in that butter: a ton of corn, 1 bunch of scallions sliced, minced garlic, and fresh thyme. Season with salt.
Some heavy cream poured in. Then the chopped lobster meat.
Orecchiette pasta.
LOTS of basil and freshly ground black pepper.
Some ideas for next time:
Small amount of pork in the form of guanciale or pancetta.
A little dry white wine in the sauce
Tiny bit of Old Bay seasoning
Peach & Mascarpone Popsicles
This is absolutely the Summer of the Homemade Popsicle around here. I guess I saw Dean’s face light up once over an ice pop and my mind was made up: every seasonal fruit must be made into popsicle form. That, and the fact that my Strawberry & Coconut Creamsicles Reel went viral. It all made me think people were craving the pops like my toddler. Here is my way of incorporating peaches into a pop. I already knew mascarpone cheese was delicious with peaches… any fruit really. And I love the mix of creamy and tangy from the peaches. The recipe for these is at the bottom of this newsletter. Peach Puree Baby Food
The newest addition to my gang, Luca, is already nearly 6 months old! So he’s starting to eat some food. He’s had applesauce, baby oatmeal, mashed bananas, a few licks of a not homemade popsicle, a couple accidental nibbles of a chocolate cupcake and now peach & banana puree. I made him a big batch of Peach & Banana Baby Food earlier in the week and it has been eaten straight up, mixed with baby oatmeal and even stirred in yogurt for my older son. What I’m Loving This Week:
Mushrooms & Eggs: Small skillet > butter > any kind of mushroom > season with salt and cook until tender > pour over scrambled eggs > let cook until set > showering of basil. YUM.
Liquid IV Hydration Multiplier: My best friend told me about these things. It's a powder that turns your water into gatorade but without all the added chemicals and toxic crap in gatorade. It’s also sweetened with just cane sugar instead of whatever scary corn syrup they put in other sports drinks. Anyway, I didn't believe her that they hydrated you more than actual water. But in my defense I don't drink things like gatorade so I didn't realize the benefit. A few days ago I got back into my Peloton habit and the first class was especially rough on me. I drank one of these immediately after and I swear I felt better much faster than just water alone. Recently, I spotted them at Costco
