It’s peach season baby! I don’t know about where you live but here in NJ the peaches are GOOD this year. They seem extra good to me compared to years past. And what do millennial moms love? Peaches in a salad and anything with burrata. Am I right? Below I’m sharing a some simple steps to a create a beautiful Peach Caprese Salad with Burrata.

If you follow along on Instagram, you might have seen that I launched OLIVIA’S a month ago. Olivia’s is a once weekly meal delivery service that delivers locally to Maplewood NJ, where I live. I’ve been secretly working on this for the better part of a year. We’re in our second week of deliveries and it’s been wild! The response has been amazing and I am working my tail off. Peach Caprese Salad
Burrata - Place a ball of burrata in the middle of a large plate or platter. If you don’t want to use burrata you can use a good fresh mozzarella and slice it.
Peaches - you’ll want ripe peaches of any variety. Even nectarines are great here. Cut them in half, take out the pit and cut into wedges. Scatter around the burrata.
Tomatoes - any variety will do as long as they are nice and ripe. Actually its nice to us a few different kinds here for different colors and textures. Slice them and scatter around the platter.
Herbs- Basil is the classic choice here and I also like to add mint. tear the leaves into big pieves and sprinkle over the salad.
Olive Oil, Lemon & Salt - Dress the salad with the highest quality extra virgin olive oil you’ve got, a little lemon zest and lemon juice, and plenty of salt. If you have a flaky sea salt this is the place to use it.
