Zucchini fritters are one of those things that when I see someone posting a recipe for one, I think, “but do we really need another recipe for this??”. Well, you need one more. This one. Because it’s not your average dill, garlic, yogurt dipping sauce variety. It tastes like something you’d get a Japanese restaurant. And anything that tastes like it came out of a Japanese kitchen is a dish for ME.

Let’s also get real that no one LOVES zucchini right? When you ask someone what their favorite vegetable is , no one EVER says zucchini, right? It’s kind of bland and easy to cook wrong. But come late summer, it’s inexpensive and you’ve got loads of it somehow. Make these fritters, let me know how you like them. Funny Toddler Anecdote

Before I had kids and a parent would tell me something inappropriate their toddler said, I low key thought they were making it up for a cute story. But turns out it happens ALL THE TIME and it is indeed ADORABLE. Dean loves Thomas The Tank Engine like every other red blooded two year old. And there’s a character named Percy, the green one. We have the little figurine which he carries everywhere. Being that he’s 2, he can't quite pronounce PERCY. So he walks around our house saying “Pussy, Pussy, Pussy!” over and over. And man does it make my husband and I crack up.

What I’m Loving This Week:

  1. Trader Joes Fermented Calabrian Chilies: I’ve written about this beloved jar of goodness before. It’s a spicy paste that has an ever so faint funkiness from being fermented. This week I used a small spoonful in both a big pot of braised greens and a zucchini pasta that was so good it may be next week’s recipe. 

  2. Seed + Mill Tahini & Halva: this stuff is special. It’s a small business out of Brooklyn that makes HANDS DOWN the best tahini I’ve ever had. It’s so worth the extra few dollars to get your hands on this stuff. Because it’s not bitter like some tahini, it’s smooth and sweet almost. I used it in my Roasted Peach & Tahini Blondies. And if you want one of the best sweets you’ve ever had, buy their halva. OMFG. When they sent me this care package of tahini I was at once disappointed and then quickly RELIEVED they didn’t send Halva. It’s too damn good. Anything from their website would make a beautiful gift for the food lover in your life.
