Strawberry Coconut Creamsicles
3 ingredients + a blender + popsicle molds. That's all you need.
Where I live, it’s the beginning of strawberry season- the time of year that I’m reminded that I actually DO like strawberries. Hard, white on the inside out of season strawberries, don’t really rock my boat. The ones I’m growing in pots at my house and the ones I’m buying at the farmers market are heavy, soaked in red juice and crimson throughout. It’s like they’re “strawberry flavored”. Just an absolute treat. These popsicles are a great way to use strawberries, especially if you’ve been over zealous in your buying and maybe you have too many that are about to turn. I ran this recipe last summer and people have written saying it’s their GO-TO all summer and that they’ve had great success experimenting with different fruits and flavor profiles. The Popsicle Mold
This recipe was developed using THIS mold. I like it because it’s straightforward to use and has a really classic shape. But you can use whatever mold you’ve got. A quick google search will show you household items you can also use as molds, like paper cups, etc.
