The New Yorker cartoon that they ran on Instagram this week was plucked right out of my household. After sharing in my stories, I got a lot of DM’s saying the same about their family. It’s ridiculous how much my dad and I talk about corn and tomatoes all summer long. Which farmstand has the best. How disappointed he was wit the corn form that guy last week. Every year the tomatoes from the other guy get later and later. Phone rings “Hi, I’m at the farmstand. Are you good on corn? Or should I get you some?”
Corn & Eggs
Also right around this time every single year I post on instagram about my favorite breakfast. It’s super simple: Skillet. Butter. Some kind of allium (onion, scallion, garlic) or garlic powder. Corn cut off the cob. Salt. Cook for 1 minute. Push the corn to the sides and crack and egg in the middle. Cook until the white is set (or scramble). More salt plus any herbs. Basil really is the best. It’s SO delicious. On repeat all summer. I also love to buy a bunch of corn at its peak, then cut all the kernels off, pack them in resealable bags and freeze them. Is anyone like me, that you much prefer corn off the cob?
4 ingredient potato salad
A few weeks ago I was at my best friend’s house rummaging for snacks in her fridge. I came across a Tupperware of the most delicious potato salad. She said it’s the one her mom always makes. Well it was new to me! Her mom puts these ingredients and only these ingredients in it: Red potatoes, mayo, red onion and dill. Her mom uses a combo of dried dill and fresh. YUM! I made it twice last week and here’s the ratios I worked out. I haven’t included S&P in here but yes, season to taste.
3 pounds baby red potatoes, boiled in well salted water until just tender then cut in half
3/4 cup mayo (gotta be Hellmans for me)
1 small red onion, finely chopped
1/2 cup chopped fresh dill
What I’m Loving This Week:
Frozen Dumplings in the Air fryer: Great use of an air fryer! I really like Trader Joes frozen dumplings. And sure, Putting them in a pan with a little water and oil, simmering until the water evaporates and the dumplings are steamed, then letting them crisp in the oil is fine. But you run the risk of them sticking and you have to watch them and turn them. If you drizzle them with a tiny bit of oil and put them in the air fryer they get crispy all the way around and no fussing! A little soy sauce and chili oil mixed together for a dipping sauce - Lunch!
Bandanas as Napkins: I bought a bunch of bandanas on Amazon for Dean’s birthday party back in May. His party was summer camp themed- Camp McCool. Amazon has some great color options too. They arrived very stiff and rigid but 2 runs through the washing machine and they were soft and had that “lived in” look. I’ve been using them as napkins all summer long and they are adorable! I’m also not too concerned if they get ruined because they aren’t that expensive. I have the cream color you see in the photos, an olive green and navy.
Watermelon with Lime: If you’re already putting citrus on your watermelon, you know. Watermelon is greatly enhanced by both citrus zest and juice. It takes it to the next level. Next time you’re putting out watermelon, zest a lime or lemon over it and then squeeze the juice all over. You’ll taste immediately what I mean. It also seems fancy with the least bit of effort.
