Overnight Sandwich Bread
a perfect loaf for toast, sandwiches and snacking that lasts all week.
Well, here she is! I’ve made this bread now 6 times! It’s so good, and just like my focaccia, I know I’ll be making this forever. If you’re a parent, you’re likely buying a lot of bagged sandwich bread. There’s some very high quality options out there these days - I really like Dave’s Killer Bread. But they get expensive and by now you all know that I’m “extra” and like homemaking what I can. By making it yourself, you can have total control over the ingredients.
This recipe is not “hard”, it just takes a little more concentration and time than my average weeknight dinners. This is the plan:
Make the dough and let it proof (baking talk for “rise”) 12 hours (and up to 48 hours! its flexible) in the fridge.
3 hours before you want to bake, take it out. Put it in the loaf pan and let it proof for 2-3 hours on the counter. Bake.
Let it cool completely before slicing.
Delicious Ideas on How To Eat:
Lightly toasted with grass-fed butter (WOW) and soft scrambled pasture raised eggs (WOW x 2)
Cream cheese & Bonne Maman jam
The best ham & cheese sandwich ever
Roasted/ grilled vegetables, goat cheese & pesto sandwich
Process the dry ends in the food processor until crumbly. Toast in a pan with olive oil and garlic powder to make delicious breadcrumbs to go over salads and pastas.
